So.. What Do You Even Eat?? //2

And welcome back to another post about what I eat! If you want to, you can check out the first post here where I share three amazing pasta dishes - who does not love pasta? Well, it is my favorite thing ever.. well apart from pancakes.. Today is also three dishes. Breakfast, lunch and dinner. Pancakes are one of the best things to eat for breakfast. And they are easy to make! These are gluten and refined sugar free so let's do this thang. All you have to do is blend up these ingredients in a blender: 
2 peeled bananas
½ a cup of oats
1-2 cups of rice flower (or any other flour)
1 tsp vanilla powder
1-2 cups of water (you decide the thickness of the batter)

Then just fry them on the pan with some coconut oil and enjoy with whatever topping you want. I like to use jam but sometimes I also make this strawberry sauce where you just blend up:
250g frozen strawberries
2-3 scoops of coconut cream
1 tsp vanilla powder
2-3 tbsp agave or any other sweetener 

Who does not like nachos? Well, here is the most amazing nachos you will ever eat. All you do is make the 'cheese' which I have a link for right here. Put it on the nacho chips and then in the oven it goes for about 10 minutes.
For extra flavor and awesomeness I like to add cubed tomatoes, avocadoes and spinach. Oh, and some guacamole of course - blend up an avocado, a glove of garlic and some lemon juice. 

For dinnertime it is sweet potato time! Peel and cut them into small cubes. If you want to then add some spices (garlic powder, onion powder and paprika) - Put them in the oven for about 15-20 minutes and top them off with some tomato, avocado and spinach. Enjoy!
